Our homemade sauce is made from a stock made by simmering chicken bones until they become tender, and we have been adding more to it since we first opened.Only the meatballs and liver, which need to be thoroughly coated with the sauce, are dipped directly into the sauce; the other cuts are carefully brushed with the sauce using a brush before being grilled.
